Ingredients

  • 4 Tbsp Roasted Red Pepper Spread
  • 2 10-inch whole-wheat flour tortillas
  • 1 carrot, shredded
  • 1/2 seeded red or yellow pepper, seeded and thinly sliced
  • 1 small red onion, thinly sliced
  • 1/2 C shredded Cheddar cheese
  • 1/2 C arugula leaves

Preparation

Put 2 tablespoons spread on each tortilla. Divide and arrange all filling ingredients in row along center one-third of tortillas. Roll up and slice in half.
